Chimmichurri Sauce

Here is a recipe for a sauce that is great for grilled chicken. It originated from the Weber Gas Grill Cookbook that came with our grill. This tasty sauce has served us well at family get-togethers and parties over the years. Yes, it’s so good that we have been making it for years… 6 to be exact. My husband says the recipe is “party scale” and covers 4 1/2 pounds of meat. If you’re just making it for your family, you might want to scale it down! We have used it on steak, but like it on chicken best. Enjoy!

Ingredients

1 cup olive oil
1/4 cup malt vinegar
1/3 cup parsley, minced
4 cloves garlic, minced
2 teaspoons dried oregano leaves
2 bay leaves
1/4 teaspoon cayenne pepper
3/4 teaspoon salt
1/2 teaspoon pepper

Instructions

Combine ingredients. Let stand, covered at room temperature 8 hours or overnight. Reserve some sauce in separate bowl to serve with grilled meat. Drizzle meat with sauce; rub into surface. Grill meat over indirect medium heat until tender and juices run clear. Serve meat with reserved sauce.
