Berry Stripe Birthday

Berry Stripe CakeIt’s been birthday season at our house lately. My husband’s birthday is the last day of January, then roughly 3 weeks later is Jocelyn’s and three weeks after that is Alexis’ big day.

For Mike’s birthday we had a “fat feast” because he planned to begin dieting the following Monday. I think we ate out almost every meal that weekend! Instead of birthday cake we had homemade brownies with ice cream.

Jocelyn had a more specific request for her birthday. She told me she wanted polka dot cupcakes to take to preschool. I used a “Funfetti” cake mix. It was a white cake mix with little “dots” of color throughout the mix. I frosted them pink and added little round candies all on the top. If I ever do that again, I will use m&m minis instead of those hard candies in the cake mix aisle.

Her birthday was on Wednesday and we didn’t celebrate with the whole family until the weekend. The cake she requested for the family was “berry and striped”. Not strawberry, but “all the berries, mom”. She wanted the outside to be striped. I bought a strawberry cake mix and just threw in some chopped blueberries and blackberries. I bought three tubes of icing in her favorite colors: pink, purple and red. I sliced up the strawberries and she helped me decorate it.

I’m glad that we decorated it together, because first of all, it was lots of fun. Secondly, there was no way I could have done it exactly the way she expected it, so it helped to have her involved in the process. It tasted delicious and it was unique- just like my 4-year-old big girl.
