White Chicken Chili
This is a super easy recipe for White Chicken Chili. This is what I call a “cheese and chip” meal. All you really need to go with it are some tortilla chips, shredded cheese and a little sour cream if desired. This recipe makes a lot but freezes well. You can serve half to your family and freeze the rest for another time or share it with a friend. This is also good with cornbread.
Ingredients
4 boneless skinless chicken breasts
1 onion, chopped
2 cloves garlic, minced
1 tablespoon oil
14 ounces chicken broth
4 cans Great northern beans, rinsed and drained
1 can Great northern beans, mashed
1 can (4.5 oz) green chiles
1 teaspoon salt
1 teaspoon cumin
3/4 teaspoon oregano
1/2 teaspoon chili powder
1/8 teaspoon cloves
1/8 teaspoon crushed red pepper flakes
Instructions
Boil and shred chicken. Sauté onion. Combine chicken, onion, and remaining ingredients. Simmer 30 minutes until hot. Serve with tortilla chips, sour cream and cheese. Serves 10-12.
