Fruit and Oat Scones
I’m terrible at eating breakfast. I’m a sleepyhead who doesn’t want to get out of bed and when I finally do, I have to rush. It’s one thing to have to rush yourself. If I sleep so late that I have to get ready in half an hour, I can pull it off. I did it all the time when I was single. But you throw kids in the mix, and you can forget it. It’s impossible to rush a 4 year old. It simply can’t be done. On mornings when we have to be somewhere, I rush to get the girls fed. I grab whatever is on hand for myself and hit the road, fighting the temptation to stop by Chick-fil-A for chicken minis and a sweet tea with lemon.
I’ve decided to find easy recipes that I can use to make my own grab-n-go breakfasts. I made these fruit and oat scones today. They are only slightly sweet but delicious. I used golden raisins and craisins for my dried fruit. This recipe is from the Pampered Chef Stoneware Sensations cookbook.
