Superfood Cookie Dough Bites

If you’ve been following my blog at all, you probably know that I have a love/hate relationship with health. I desire to be healthy, but my tongue tells me otherwise. I desperately want to feed my family well, but I’m also kind of lazy when it comes to putting in the effort. For several years I was making my Homemade Granola Bars, but those ended up just being way too much effort to make twice a month.

Enter these no-bake, superfood, cookie dough bites. A ball of superfoods that tastes like cookie dough? I can’t think of anything better! One batch makes about 30 bites, so if everyone is having one a day you can calculate how many you should make from there.

The best part about these healthy treats is that everything in them lasts forever in the cabinet. If you put these in a tupperware in the fridge, they will last for as long as you need them! If you decide you aren’t going to use them soon enough, you can always put them in the freezer and get them out as you want them.

Superfood Cookie Dough Bites

3 1/2 cups regular oats 

1/4 cup flax meal/ground flaxseed 

1 cup mix-in’s (Ideas: raisins, chocolate chips, sunflower kernels, slivered almonds, chia seeds, dried cranberries/blueberries, etc.)

1 1/2 cups softened peanut butter 

2/3 cups honey 

Combine oats, flax meal and mix-in’s in a large bowl. Measure peanut butter into a microwavable bowl/glass and soften in the microwave for 45 sec – 1 min until it is runny. Measure honey and dump into bowl with the peanut butter and mix well. Add to bowl of dry ingredients and mix well. Roll dough into balls and put into a storage container. Store in the fridge or freezer.
