Are you one of those mamas that struggles to get good stuff into your wee babe’s mouth? I honestly do not have what I would consider a “picky” child… but I still find myself putting a significant amount of effort into getting the “right” nutrients into him!
My child loves mac n’ cheese, hot dogs, chicken nuggets, fruit snacks and juice. Yes, I’m that mom…. a NORMAL mom!
But, I want the very best for my child. And that means forcing some veggies down that little throat. It seems like every day is a new adventure in taste testing and seeing whether he will accept what he ate yesterday, or if his taste buds changed overnight.
There is ONE recipe that he always seems to love though! And that’s my toddler ice cream. He loves having this for breakfast, lunch and snacks because he thinks it is dessert. I love it because I know that he is getting tons of nutrients and enjoying it too!
Toddler Fruit & Veggie Ice Cream
1 cup vanilla greek yogurt
1/2 cup frozen mixed berries
1 frozen banana
Handful of fresh spinach
Milk to thin, if needed
Blend all ingredients until smooth. You may need to experiment with portions, as some brands may turn out differently. I’ve found that the banana is optional, but if I add it I usually need a slash of milk to think the mixture out. I like the texture to be thick enough that it scoops like ice cream for spoon feeding, but you could also just make a smoothie if your toddler is able to drink from a cup!
