Berry Spinach Salad

Guys, this is one of my favorite recipes of all time! I absolutely love how quick and easy it is. And I ALWAYS have a great response when I make this for potlucks or family get-togethers.

Not only is it yummy and quick to put together, it has all the food groups except for grains (a loaf of crunchy french or italian bread is a PERFECT addition to make a full meal!)

So, if you’re looking for the perfect side dish to bring to a gathering or party, or a light and healthy main course for a hot summer night, this is it! Everyone will be oohing and ahhing over your restaurant-esque salad and you can just smile knowing that it really wasn’t that hard.

Berry Spinach Salad

1 bag fresh spinach 

1 cup sliced berries (strawberries sliced diagonally & blueberries are my favorite choices!)  

1/4 cup feta cheese, crumbled

1/8 cup crushed walnuts (crushed pecans or slivered almonds are also great)

1 chunked chicken breast, grilled + seasoned w/ salt & pepper (meat is also optional! If making as a main dish, I use chicken. If bringing as a side, I usually don’t.

Optional additions: Red onions, cucumbers, raisins or avocado 

Raspberry vinaigrette or Balsamic dressing (or whatever oil/vinegar dressing you prefer – poppy seed is a favorite with this salad)

Toss and serve! Keep refrigerated until serving, as the spinach will wilt and berries will leak if left out too long at room temperature. 🙂

    This looks like such a yummy lunch! I have feta! I’ll have to pick up some strawberries on the next grocery run!
