Egg Sausage Breakfast Burritos

Have you ever really, REALLY, wanted to eat healthy? But then you’re too busy/lazy/unmotivated/tempted/etc. to actually follow through?

Trust me, I’ve been there. Basically always am.

I know, I’m not one to talk. I’m a stay at home mom with access to a budget-friendly grocery store and plenty of time to meal plan, shop and cook for my family.

But honestly, it’s just not always that simple.

If I was a working mom, let’s face it…. my family would be eating a LOT of frozen, packaged, preserved and fast food.

Thank goodness that isn’t the case, because I can barely handle keeping my family healthy as it is! If you’re feeling like you don’t know how to manage healthy eating, check out my tips in this post.

So, one of the things I’ve found is most helpful in feeding my family healthy foods is freezer meals and food prep! Now, hold on. I’m not one of those crazy healthy moms that food preps every meal for the entire week full of veggies and quinoa (but more power to you if you ARE one of those moms!)

But I have definitely found that having some yummy, healthy options already made and put in the freezer or fridge is a great excuse to grab that in lieu of another ready to eat packaged food. My family is really into quick and easy fixes. We are definitely Americans. 🙂

One of my new favorite ready to eat breakfast’s is these egg sausage burritos. Once every 2-3 weeks I cook up the meat, veggies and scrambled eggs and fill little snack baggies and toss them in the freezer. Whenever someone wants a burrito for breakfast… grab a baggie, arrange on a tortilla with shredded cheese and salsa, and pop in the microwave for about 30-45 seconds. Wrap it up and enjoy!

Egg Sausage Breakfast Burritos

1 lb pork sausage (or any other kind of ground meat)

1/2 veggies, chopped and cooked in with the meat

Optional: Any veggies of choice diced and cooked in with the eggs or meat. Spinach, beans, sweet peppers, onions and potatoes are great options. (you may want to research if your veggies of choice need any special preparation to be freezed properly) 

10 eggs, scrambled 

Salt & pepper to taste (plus any other seasonings you would like to add)

1/4 measuring cup 

Snack sized ziplock baggies 

Brown ground meat in a large skillet, along with any other veggies you want to include. While the veggies and meat are cooking, scramble your eggs in another large skillet however you usually do them (with butter/oil/milk are all fine). When all your ingredients are prepared, mix them together in a large bowl or in one of the skillets if it is large enough. Use a 1/4 cup scoop to fill each snack sized baggie and close tightly with no air inside. Store in a Tupperware container in the fridge. Should make about 20 burritos, depending how many veggies you added.

When ready to eat, dump frozen contents onto a tortilla along with cheese and salsa. Microwave for 30-45 seconds or grill in a skillet with butter. Wrap and enjoy!
