Superfood Energy Bites

If you’ve been following my blog at all, you probably know that I have a love/hate relationship with health. I desire to be healthy, but my tongue tells me otherwise. I desperately want to feed my family well, but I’m also kind of lazy when it comes to putting in the effort. For several years I was making my Homemade Granola Bars, but those ended up just being way too much effort to make twice a month.

Enter these no-bake, superfood, energy bites. A ball of superfoods that tastes like oatmeal cookie dough? I can’t think of anything better! One batch makes about 35 bites, which lasts about 2 weeks with my family of 5 each eating a few a week.

The best part about these healthy treats is that everything in them lasts forever in the cabinet. If you put these in a closed container in the fridge, they will last for as long as you need them!

Superfood Energy Bites

3 1/2 cups regular oats 

1/2 cup flax meal/ground flaxseed 

1 1/2 cups mix-in’s (Ideas: raisins, mini chocolate chips, sunflower kernels, slivered almonds, walnuts, pecans, chia seeds, dried berries, etc.)

2 cups softened peanut butter 

2/3 cups honey 

Combine oats, flax meal and other mix-in’s in a large bowl. Measure peanut butter into a microwavable bowl or measuring glass and soften in the microwave for 45 sec – 1 min until it is runny. Measure honey and dump into bowl with the peanut butter and mix well. Add to bowl of dry ingredients and mix well. I like to put the dough in the fridge for an hour or so until it is not so sticky Roll dough into balls and put into a storage container. Store in the fridge or freezer.
