For some odd reason, I’ve always thought of Chicken & Noodles as a recipe I wouldn’t be able to make right. Don’t ask me why, but because of this, I procrastinated making it, until the day my hubby had his wisdom teeth taken out. He requested Chicken & Noodles with mashed potatoes.
So I called my mother-in-law.
Oh, she doesn’t know how she makes it. She just does it.
Okay, so I called my mom!
“Uhm…you boil the chicken, then make the noodles, then throw some stuff in…I don’t really know.”
*smh* Thanks, moms.
So I decided to investigate the world wide web. I wasn’t interested in a long, made from scratch process…. but I DID want that delicious, made from scratch taste.
Eventually, I came across this amazingly simple recipe. I honestly can’t remember where I found it on the internet, otherwise, I would link to it. I wrote the recipe down in my recipe book and have been using it often since! Here’s how it’s done:
Crockpot Chicken & Noodles
3 cups shredded, cooked chicken
1 onion, diced
2 cans cream of chicken soup
1 can cream of mushroom soup
5 cups chicken broth
2 cups frozen mixed veggies
14 oz egg noodles
Place onion, chicken, noodles, broth, cream soups & seasonings in slow cooker.
Cook 3 hours on high.
Add mixed veggies.
Cook 60 minutes.
Serve w/ mashed potatoes.
And there you have it! With minimal effort, you’ve got yourself a hot dinner perfect for the cool weather. Enjoy!
