Perfect Pumpkin Cookies

The first time I tried this recipe, I was about fourteen. I don’t even remember where I got it from and may have made a few changes to it here and there. But what I remember most about these cookies is that they were a HUGE hit with my brothers and dad.

At that time of my life, I wanted so badly to make my family happy. Making delicious baked goods that made everyone croon about my baking talents was my favorite thing to do – especially around the holidays!

So without further ado, here is my very favorite recipe for pumpkin cookies!

Perfect Pumpkin Cookies

Cookies:

1/2 cup butter 

1 cup sugar

2 eggs

1 tsp vanilla

1 cup canned pumpkin 

2 cups flour 

4 tsp baking powder 

1 tsp salt

2 1/2 tsp cinnamon 

1/2 tsp nutmeg 

Cream Cheese Frosting:

1/2 cup butter 

8 oz block cream cheese 

3 tsp vanilla 

4 cups powdered sugar

1 tsp cinnamon OR autumn sprinkles 

Preheat oven to 350 degrees. 

Beat the butter and sugar until light and fluffy. 

Add eggs, vanilla, and pumpkin and mix well. 

Add flour, baking powder, salt, and spices. Mix well. 

Drop in heaps onto a cookie sheet. 

Bake for 15 minutes. 

While baking, begin the frosting. 

Beat cream cheese, butter, and vanilla until well blended. 

Add powdered sugar one cup at a time until incorporated. 

When cookies are done and cooled, frost with cream cheese frosting. Sprinkle cinnamon OR autumn sprinkles on top. Enjoy!
